Goals and Learning Outcomes

Celiac disease is an inherited autoimmune disease in which the only treatment currently available is strict adherence to a lifelong gluten-free diet. Because of that, registered dietitians/nutritionists and other healthcare providers play an important role in providing education and support to this population of patients. Understanding the continuously evolving risk factors, clinical presentation, and diagnostic methods are an integral part of helping patients manage their diagnosis. It is critical that healthcare providers not only understand the gluten-free diet but can also assist patients in preventing cross-contamination with gluten both at home and when eating out, avoid nutritional deficiencies, and cope with a significant dietary change. 


After taking this course, you should be able to:
