Goal and Learning Outcomes

The goal of this gluten labeling ruling continuing education module is to educate dietitians and nurses about the newly enacted gluten-free labeling ruling, and to assist them in providing clients who have celiac disease and non-celiac gluten sensitivity valid and consistent information about the ruling, to ensure a safe and healthy gluten-free diet. At the end of this module, the participant will be able to:
  • State the basic criterion that will allow a food to be labeled gluten-free
  • Explain why the standard of <20 parts per million (ppm) was chosen to define gluten-free and how best to explain this to patients
  • Discuss how this new labeling ruling applies to U.S. Department of Agriculture–regulated foods and alcoholic beverages and to restaurants
  • Explain the role of interprofessional collaboration in providing consistent information to clients on the new labeling ruling to ensure a safe and healthy gluten-free diet
 
Effective 8/1/2014, the Florida Board of Nursing will not accept contact hours offered in tenth hour increments (example: 1.6 contact hours). Course contact hours will be rounded down to the nearest half hour (example: 1.6 contact hours becomes 1.5 contact hours, 1.4 contact hours becomes 1.0 contact hours). This course will be reported to CE Broker for FL RNs, LPNs, ARNPs, and CNSs as 1.5 hours.
